Caribbean Salsa Chicken

This is one I discovered a while ago, and now orange marmalade is a staple at our house. Forget all the instructions. Just skip the oil and throw the rest of the ingredients in a crockpot. Let it cook until the chicken falls apart - mix it up, then pour it over your rice. I just bought some mango marmalade this week to try instead of orange. Mango sounds a little more caribbean to me - I'll let you know how it tastes.

K, so I made it again today with the mango marmalade - WOW! Love it even more. It took me at most 5 minutes to throw my frozen chick in the crock pot, blend the remaining ingredients (so I wouldn't have to chop the cilantro) and pour it one the chick and wala! Dinner was good to go. I cook it all day so the chick just falls apart and is easy to mix up, but if you are in a hurry, I have broiled it and it was good that way too.
