This is one I discovered a while ago, and now orange marmalade is a staple at our house. Forget all the instructions. Just skip the oil and throw the rest of the ingredients in a crockpot. Let it cook until the chicken falls apart - mix it up, then pour it over your rice. I just bought some mango marmalade this week to try instead of orange. Mango sounds a little more caribbean to me - I'll let you know how it tastes.
