This is one I used to make in college. I was being lazy and I had all the ingredients so this is what we had tonight for dinner. It's right on the Stove Top Stuffing box. But you can buy generic, save a little bit of money and still use this recipe, right?
1 lb of chicken breast diced
1 6 oz box of stuffing (chicken or herb flavor)
1 can of cream of chicken soup
1/3 cup sour cream
1 bag frozen mixed veggies, thawed and drained
Preheat oven to 400 degrees. Mix diced chicken, soup, sour cream, and veggies in the bottom of 9x13 baking dish. Make stuffing according to directions. Spread stuffing on top of mixture. Put in the oven uncovered for about 30 minutes or until chicken is done and soup is bubbling on the sides of pan. Let cool a bit and enjoy. It's nothing fancy, but its tasty enough and filling and easy on days when you don't have much time.

Sounds de-lish! I loooove stuffing and Blaine doesn't, so I am going to have to make this one night when he is eating elsewhere, but I look forward to that night!
I totally thought this meal would be a flop with my family, which my husband questions why I even tried it. Anyways, it was a hit, my husband loved it, my 8 year old and 5 year old gobbled it up. My 3 year old picked out the "yucky parts" (veggies) and gobbled up the rest. Thanks for posting this one!
