Cheesy Stuffed Shells





Ingredients:

1 16oz container of low fat cottage cheese
1 10oz pkg. frozen chopped spinach (for our family we omit the spinach)
1 c. mozzarella cheese
1/4 c. grated Parmesan cheese
1 tsp. Italian seasoning
20 jumbo pasta shells, cooked, drained
1 26oz jar of spaghetti sauce
1 large tomato chopped


Directions:

Heat oven to 400. Mix cottage cheese, spinach, 1/2 c. mozzarella, Parmesan, and Italian seasoning, spoon into shells. Mix sauce and tomatoes spoon 1/2 into 9x13 dish. Add filled shells, top with remaining sauce. Cover and bake 25 min. Top with remaining cheese and bake uncovered for 2 min.

Alfredo Pasta bake

I hate bottled alfredo sauce but this was actually way good. I added a little extra milk in mine just to make sure it wasn't dry.

Alfredo Pasta Bake

Ingredients:
8 oz pasta, cooked and drained
2 cups broccoli florets
1 cup mushrooms
1.5 cups chicken, cooked and shredded or diced
1 jar alfredo sauce
2 cloves garlic, minced
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese
2 Tbls butter
Directions:- Preheat oven to 350 degrees- Coat the bottom of the two small or one medium baking dish with a thin layer of alfredo sauce. In a medium bowl, mix the pasta, broccoli, mushrooms, chicken, garlic and alfredo sauce until combined. Place mixture into baking dish and top with mozzarella and Parmesan cheese. Cut the butter into small pieces and scatter on top of the cheese. Bake for 20 minutes or until cheese is hot and bubbly.

Rachel's notes-I like to use Classico Four Cheese Alfredo Sauce. And when I bake it I wait until it starts bubbling and then I turn on the broiler for just a few minutes just to brown the cheese, just don't burn it. Burn=no good.
I also don't follow this recipe to the "T". If I think it needs a little more of this or that I add it. Just don't use too many noodles. I usually don't use the whole package of refrigerated noodles if you use too many noodles add more sauce otherwise it won't be very moist. Okay enough of this. If you try this let me know what you think. I love Ambers blog (which I got from Tia's blog) I have gotten about 4 recipes from her that my family love. Sigh... I wish spell check would work.

7-Layer dip or Taco Casserole

My friend makes this and serves for dinner. I never thought of 7-layer dip as a maindish, but it was fabulous!

7-layer dip:

1 lb ground beef
1/2 package taco seasoning
1 can refried beans
1 c. sour cream
8 oz. cream cheese
1 can diced tomatoes
salsa (I replaced the tomatoes and salsa with a can of Rotel)
1 container guacamole (I make mine homemade)
mozzarella
black olives
Tortilla chips or wraps

Brown 1 lb ground beef and drain.
Add about 1/2 pkg taco seasoning (no water, though).
Meanwhile, spread 1 can refried beans into 9x13 pan.
Ground beef goes on top of that.
Mix together 1 c. sour cream with 8 oz cream cheese and then spread on top.
Next goes on 1 can diced tomatoes (drained) plus some salsa (as desired).
Then 1 container of guacamole
Top with mozzarella and sliced olives.

Bake 350 for 30min.

I like to serve with Hint of Lime chips, but my hubby likes to scoop his out into a tortilla for a burrito.

Tea's Creamy Chicken & Broccoli Pasta Bake

We had this for dinner tonight and we all enjoyed it. It's fairly healthy and decently tasty (though you will definitely want to add some salt). Nothing special, but a nice weeknight dinner.

1 lb boneless skinless chicken breast

2 c whole wheat rotini pasta

9 oz broccoli florets

1/2 c onions, chopped (the recipe list includes these onions but never says when to add them)

1 tbsp butter

2 c shredded mozzarella cheese

4 oz 1/3 Less Fat Neufchatel Cream Cheese

1 c low sodium chicken broth


Cut raw chicken into bite size chunks. Cut broccoli into bite-size florets.

Heat oven to 375. Cook pasta in large saucepan as directed on package, adding broccoli the last 3 minutes.

Meanwhile, heat butter in large nonstick skillet on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes or until chicken is cooked through. Add cream cheese; cook and stir on low heat 1 minute or until cream cheese is melted. Stir in 1 cup mozzarella.

Drain pasta and broccoli. Add to chicken mixture, mix lightly. Spoon into a 2 1/2 quart baking dish.

Bake 15 minutes or until heated through. Sprinkle with remaining cup of mozzarella cheese. Bake 3 minutes more or until cheese is melted. Remove from oven and let stand 5 minutes. Serve.

Shepherd's Pie (Or Technically Cottage Pie)

I call it Shepherd's pie, but technically because I used beef and not lamb, I'm supposed to call it Cottage Pie. Whatever. It's good.

I modified this slightly from an America's Test Kitchen recipe. The original recipe was for diced lamb shoulder chops. I'm sure that'd be delish, but I was too lazy. Can be assembled in either a 9x13 pan or a 10 inch pie plate. Serves 6-8.

FILLING:
1 lb ground lamb (or in my case, ground beef)
1 1/2 tsp salt
1 tsp ground black pepper
3 Tbsp vegetable oil, if you need it
1 medium onion, chopped coarse
2 medium carrots, cut into 1/4 inch slices
1 medium clove garlic, minced
2 Tbsp flour
1 Tbsp tomato paste
2 cups chicken broth
1/4 cup full-bodied red wine (I didn't have this, but I did have some white wine so I used that instead and it was still good)
1 tsp Worcestershire sauce
1 tsp chopped fresh thyme leaves
1 tsp chopped fresh rosemary
1 cup frozen peas, thawed

TOPPING:
2 lbs large russet potatoes, peeled and cut into 2 inch cubes
1 tsp salt
6 Tbsp butter
3/4 cup whole milk, warmed
2 large egg yolks
ground black pepper

FOR THE FILLING: Season the meat with salt and pepper. Heat oil (if needed, I never use it) in a large skillet over medium high heat until shimmering. Add meat, onions, and carrots and cook, stirring occasionally, until meat is well browned, about 5 minutes. Reduce heat to medium and add garlic, flour, and tomato paste and cook until garlic is fragrant, about 1 minute. Whisk in the stock, wine, and Worcestershire sauce. Stir in the thyme and rosemary. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.

FOR THE TOPPING: Meanwhile, put the potatoes into a large saucepan; add water to cover and 1/2 tsp salt. Bring to a boil and continue to cook over medium heat until the potatoes are tender when pierced with a knife, 15 to 20 minutes. Drain the potatoes well and return them to the pan set over low heat. Mash potatoes, adding butter as you mash. Stir in the warm milk and then the egg yolks. Season with the remaining 1/2 tsp salt and pepper to taste. (I thought it needed even more salt than this.)

TO ASSEMBLE AND BAKE: Adjust oven rack to the middle position and heat the oven to 400 degrees. Stir the peas into the meat mixture and check the seasonings. Pour the meat mixture evenly into a 9x13 baking dish. With a large spoon, place the mashed potatoes over the entire filling. Starting at the sides to ensure a tight seal, use a rubber spatula to smooth out the potatoes and anchor them to the sides of the baking dish. (You should not see any filling.) Bake until the top turns golden brown, 20 to 25 minutes. Let rest for 5 to 10 minutes and serve.

Pie plate assembly: The filling and potato topping fit nicely in a standard 9x13 baking dish, but for a fancier presentation bake the pie in a 10 inch pie plate. The mashed potato topping rises high above the filling, much like a lemon meringue pie. To do this, place the filling in a 10 inch pie plate and then drop spoonfuls of mashed potatoes around the perimeter of the pie plate. Use a rubber spatula to attach the potatoes to the rim of the pie plate. It's important to seal the edges this way to prevent the filling from bubbling out of the pie plate in the oven. Drop the remaining mashed potatoes in the center of the pie plate and then smooth the top with a spatula. Because the topping rises so high, bake the pie on a rimmed baking sheet to catch any leaks. (You might even want to do that with the 9x13 version - I guess my seals weren't perfect so I got a good bit of dripping in my oven.)

Brown rice and black bean casserole - three stars!

Okay the thing is, I felt so healthy making and eating this. We loved it! I am posting the recipe as was found on allrecipes and I'll put my modifications at the bottom. Definitely worth making especially because if you chop the veggies fine enough your kids won't know they are eating mushrooms, zuccini and carrots, and neither will you!


  • 1/3 cup brown rice
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1/3 cup diced onion
  • 1 medium zucchini, thinly sliced
  • 2 cooked skinless boneless chicken breast halves, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon cumin
  • salt to taste
  • ground cayenne pepper to taste
  • 1 (15 ounce) can black beans, drained
  • 1 (4 ounce) can diced green chile peppers, drained
  • 1/3 cup shredded carrots
  • 2 cups shredded Swiss cheese
  1. Mix the rice and vegetable broth in a pot, and bring to a boil. Reduce heat to low, cover, and simmer 45 minutes, or until rice is tender.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
  3. Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Mix in the zucchini, chicken, and mushrooms. Season with cumin, salt, and ground cayenne pepper. Cook and stir until zucchini is lightly browned and chicken is heated through.
  4. In large bowl, mix the cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, carrots, and 1/2 the Swiss cheese. Transfer to the prepared casserole dish, and sprinkle with remaining cheese.
  5. Cover casserole loosely with foil, and bake 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

Okay, I made this vegetarian style; which means I omitted the chicken (read: I am lazy), and added lots more veggies (I did two zuccinis, probably like three cups of sliced mushrooms). I doubled the rice (and consequently the broth), and actually I think it could have easily been tripled and still been great. I used a mexican blend of cheese. I think next time I will reduce the cheese, not because the recipe had too much cheese but because I feel like you could get away with a lot less cheese and have it still be good. I would also maybe just use plain ol' cheddar. I added a lot more thinly sliced carrots.

I had two leftover wheat tortillas and though this recipe was intended to be a casserole I served it like a burrito filling with those leftover tortillas, with a little sour cream (and salsa would be great too!). Then since we only had two tortillas we ate the rest like a casserole with a little sour cream.

What a great meal! I loved it.

Another note...be sure you realize that the brown rice has to cook for forty five minutes! I started making this dinner way too late in the evening and didn't realize it would take so long. It's not hard to make at all, just takes a long time to make the rice and also to bake in the oven.

Totally easy, healthy and inexpensive to make!!

Sheperd's Pie

This is another food storage dinner, and I thought it was delicious!, I used beef soup though and I think it would have been better with actual beef stew because there is a lot of juice in the soup and I just dumped it out, but either way it was a crowd pleaser, and very easy!


1 (40 oz) can beef stew
1 (12oz) can vegetables (peas, corn or green beans)
1 cup potato pearls (from your cannery materials)
1/2 cup grated cheese
2 cups very hot water

combine stew and vegi's then pour into an 9 x 9 baking dish.
Combine potato pearls with water, stir briefly, cover and let stand for 5-10 min (or if you are using another kind of instant potatoes just make it like it says on the package)
Spread potatoes over the stew, top with grated cheese.
Bake at 350 degrees for 30 min or until hot and bubbly.

serving suggestion:
instead of using a casserole dish, try dividing the entree into individual ramekins.

Corn Casserole

I've been making this a ton lately, and I just can't get tired of it. Can I give 5 stars out of 4? I really think it's just that good. And it's so easy! I've used fresh and frozen corn for this, and although the fresh is by far superior, the frozen is not half bad itself. Gotta love the Pioneer Woman.

Chicken stuffing bake

Now I got this recipe from the back of a stuffing box but I have changed it so much I will just write it how I do it. This is my brother in laws favorite meal(he lives with us so he eats my stuff a lot)

6 chicken tenders frozen
1/3 cup sour cream
1 can cream of chicken or mushroom
cheese grated
frozen broccoli
1/2 box turkey stuffing (i like this flavor best)
water to mix into stuffing

I know this is similar to my other casserole but this one takes like 5 minutes to prepare so i love it. Get a small casserole dish, put frozen chicken in the bottom, season it with whatever you like to season stuff with (season all, Mrs. dashes, salt and pepper. Mix together sour cream and cream of chicken, pour over chicken. Put broccoli on that and cheese then mix stuffing with some water to moisten it ( i think it is like a half of cup of water but don't quote me on that) then put the stuffing on top. cook at 350 degrees for 40-45 minutes, until chicken is done. The original recipe has you put this in a 9 x 13 pan, but if i do that i double the sour cream and cream of chicken and do the whole box of stuffing, i just like a little extra creamy stuff. We have this one a lot, i love it!

Turkey or chicken casserole (3 1/2 stars)

Preheat oven to 375
Spray 9 x 13 pan with some non stick cooking spray and add:
1st layer about 2 cups cooked rice (optional)
2nd layer cooked cut up turkey or seasoned chicken
Cover with grated cheese and dried or fresh onions
3rd layer fresh steamed or frozen broccoli
4th layer Mix together:
2 cans cream of chicken soup
1/4 tsp lemon juice (optional)
3/4 cup sour cream
5th layer Cover with stuffing ( make as directed on box or just add some water to it)
Bake uncovered for 45 minutes

This recipe is really good if you have leftover turkey, if not I just make it with chicken seasoned with season-all and a little Mrs. dash's chipotle flavoring (really great seasoning, if you don't have it you should!) I add lots of cheese too, I love cheese. It is too much work to make up the stuffing in a pan so i just add water to it. I actually only bake it for like 38 minutes too... by the way my husband really dislikes casseroles and this is one he actually likes. This makes probably 8 servings or so, so I usually do an 8 x 8 pan and just do half of everything. very yummy though and filling.

Chicken & Noodle Casserole

One of my besties in the ward brought this over right after I had my son. It's nothing fancy, but it hits the spot and works well for a weeknight dinner. Plus, it's super easy.

1 can Cream of whatever soup (we like mushroom, but pretty much anything works)
1 cup frozen mixed vegetables
1/2 cup milk
2 cups cubed cooked chicken
2 cups medium egg noodles, cooked and drained
1/4 teaspoon ground black pepper
1/4 cup parmesan cheese
1/2 cup shredded cheddar cheese

Stir soup, milk, black pepper, parmesan cheese, vegetables, chicken and noodles in 1 1/2 quart casserole dish. Bake at 400 degrees for 25 minutes or until hot. Stir.

Top with cheddar cheese and serve

Easy Chicken Bake

This is one I used to make in college. I was being lazy and I had all the ingredients so this is what we had tonight for dinner. It's right on the Stove Top Stuffing box. But you can buy generic, save a little bit of money and still use this recipe, right?

1 lb of chicken breast diced
1 6 oz box of stuffing (chicken or herb flavor)
1 can of cream of chicken soup
1/3 cup sour cream
1 bag frozen mixed veggies, thawed and drained

Preheat oven to 400 degrees. Mix diced chicken, soup, sour cream, and veggies in the bottom of 9x13 baking dish. Make stuffing according to directions. Spread stuffing on top of mixture. Put in the oven uncovered for about 30 minutes or until chicken is done and soup is bubbling on the sides of pan. Let cool a bit and enjoy. It's nothing fancy, but its tasty enough and filling and easy on days when you don't have much time.

Broccoli Chicken Casserole

I'm sure everyone has a recipe just like this, but to me this is unique because it's really the only casserole I make. I like that it's vegetabley (too few veggies is one of my biggest casserole gripes) and it's got a nice sour quality with lemon juice and sour cream. I'm such a sucker for sour...

I got this recipe from my best friend in college.

Broccoli Chicken Casserole

1 lb frozen broccoli (I buy broccoli florets in the huge bags, so I'm not sure how much I use - enough to cover the bottom of the pan nicely)
2 chicken breasts, cooked and cubed (I cook all of the precooked chicken I need for the week on the George Foreman grill)
1 11ish oz can condensed cream of chicken soup
3/4 cup milk
1/2 cup sour cream
1-2 Tbsp lemon juice (who am I kidding, I always "accidentally" overfill the Tablespoon)
1/4 tsp. paprika or curry powder (whatever suits your fancy)
1-2 cups grated cheddar cheese
optional: sliced almonds

Directions:

Place broccoli in bottom of 13”x9” pan. Put chicken over broccoli. In separate bowl, mix sauce: soup, milk, sour cream, lemon, seasoning, and almonds (optional). Pour sauce over top then sprinkle with cheese. Bake at 350˚F for 30-45 min. Serve over rice.
