Bake Potato Soup

Ingredients:
4 large baking potatoes (about 3 pounds)
2/3 c. butter
2/3 c. flour
3/4 tsp. salt
1/4 tsp. pepper
6 c. milk
1 c. sour cream (8 oz.)
1/4 c. green onions, finely chopped
10 bacon strips, cooked and crumbled
1 c. cheddar cheese

Directions:
Bake potatoes @350 for 1 hour, until tender, or use leftover from the nite before; allow to cool completely. Peel and cube potatoes.

In a large saucepan, melt butter; stir in flour, salt and pepper, until smooth. Gradually add milk. Bring to a boil; cook & stir for 2 minutes or until thickened. Remove from heat; whisk in sour cream. Add potatoes and green onions. Garnish with bacon and cheese. Serve.

I have this recipe too from another source. I like it a lot. It was actually our soup course at a ward Relief Society progressive Christmas dinner I was in charge of and it received rave reviews from everyone.
